Ingredients
- •12 large eggs (hard-boiled)
- •0.5 cup mayonnaise
- •1 tablespoon Dijon mustard
- •1 teaspoon apple cider vinegar
- •1 teaspoon smoked paprika (plus more for garnish)
- •salt (to taste)
- •black pepper (to taste)
- •6 slices cooked bacon (thick-cut, chopped)
- •optional garnishes (fresh chives or green onion tops, sour cream or crème fraîche)
Instructions

Place the eggs in a single layer in a saucepan and cover with cold water.

Bring the water to a rolling boil over high heat, then remove the pot from the heat and cover.

Let the eggs sit in the hot water for 12 minutes, then transfer to an ice bath.

While the eggs are boiling, cook the bacon in the oven at 400°F for 15-18 minutes until crispy.

Once the eggs are cool, peel them and slice in half lengthwise.

Scoop out the yolks and place them in a bowl.
