Lemon garlic chicken is a fast skillet dish to make if you want to serve a chicken dish with a pan sauce. Sauté thin chicken cutlets and serve them with a sauce made from lemon juice, garlic, chicken broth, chilled butter pats, and other ingredients. Lemon garlic chicken takes about 30 minutes to prepare.

Slice each breast in half before cooking to form four thin slices that will cook faster and more evenly as a group and are better suited to absorb sauce. Cook chicken in a large skillet in a single layer to prevent the chicken from steaming, which can make it appear rare. Coat the chicken well with flour to prevent clumping while cooking.
After removing the chicken, sauté the garlic for 30 seconds over medium heat. Pour broth and lemon juice into the pan and stir with a wooden spoon to scrape browned bits off the bottom of the pan. Browned bits will dissolve into the sauce, which you can simmer for 3-4 minutes. I find it fun to watch browned bits come off the pan. The pan smells sharp at first but settles down as the sauce reduces.
I reduce the heat to low and stir in cold butter to the sauce. I take the pan off the heat when it coats the back of a spoon. I don't want the butter to separate in the hot sauce. I add parsley to the sauce in the pan when I serve it.
