Garlic butter steak pasta is a meal I prepare after work for four people. Rotini pasta is mixed with garlic butter sauce. Steak is cooked with a crispy exterior and juicy interior. Fresh parsley and red pepper flakes are sautéed with the steak shortly before serving.

I use a 12-inch cast-iron skillet. Heat the oil until it shimmers, then add steak. Cubed steak cooked with nothing else in the skillet will be crispy on the outside and juicy on the inside if cooked quickly at high heat. Cooking time is short. Take steak out before adding sauce.
The browned residue stays in the pan, and the butter and beef broth add it to the sauce. I don't brown the garlic and let the pan shine for 3 to 4 minutes of simmering, the sauce will cling to the rotini. Homemade freshly grated Parmesan cheese can be added to the hot sauce without the gritty texture of commercially prepared Parmesan cheese.
Serve the dish from the pan while the sauce is still liquid. I am serving a side of green salad with vinaigrette for a sharp meal and garlic bread with sauce. Leave the pan on the table to keep the food warm. The sauce will cling to the noodles.
Why you'll love this recipe
- It feeds four people when using a skillet to prepare the sauce. The pasta cooks separately, and the steak is prepared separately. The steak is cooked only briefly.
- The rotini shape holds the garlic cream sauce in grooves so the pasta doesn't feel bare.
- Small servings of beef cook quickly on the grill.
- Offer the skillet at the table with salad or garlic bread for people to serve themselves.
- It is suitable to eat the next day for lunch, although the sauce thickens and the steak gets firmer when reheated.
