Jamaican brown stew chicken is my choice for dinner when I want a heartier meal․ Ingredients in the dish include bone-in chicken pieces braised in a sauce made with browning sauce‚ thyme‚ allspice‚ and Scotch bonnet peppers․ The chicken is cooked until it pulls away from the bone when eaten hot․

Patting the chicken dry before placing it in the bowl helps avoid diluting the marinade․ I apply the same marinade to each piece of chicken and pat off extra marinade before placing the chicken in a heavy Dutch oven‚ saving some of the extra marinade to add to the Dutch oven after the chicken comes out․ I keep the thyme sprig whole and do not chop it before adding it to the stew․
Leave room in the pan for browning the chicken․ Browning does not occur if there isn't enough room‚ this prevents flavor from developing in the sauce․ I add the vegetables I removed earlier to the juices in the pan when adding the sauce‚ cover the pan‚ and use the sauce to cook the chicken․
Carrots and broad beans can be added to dishes for cooking for about 10 minutes at the end of the cooking process․ I don't always add carrots and broad beans․ I like to serve hot chicken and rice with runny gravy․

Ingredients
- •3 lbs bone-in, skin-on chicken pieces (thighs and legs work best)
- •2 tbsp browning sauce (store-bought or homemade)
- •1 tbsp soy sauce
- •1 tsp salt (or to taste)
- •1 tsp black pepper
- •1 tsp garlic powder
- •1 tsp onion powder
- •1 medium onion (chopped)
- •3 scallions (chopped)
- •4 cloves garlic (minced)
- •4 sprigs fresh thyme
- •1 tsp whole pimento berries (allspice)
- •2 tbsp vegetable oil (for searing)
- •1 medium bell pepper (diced, any color)
- •2 tbsp ketchup
- •2 cups water or chicken broth (as needed)
- •1 whole Scotch bonnet pepper (optional)
Instructions
- 1
Pat the chicken dry, then combine it in a large bowl with the browning sauce, soy sauce, salt, black pepper, garlic powder, onion powder, onion, scallions, garlic, thyme, and pimento berries. Massage the marinade into the chicken, cover, and refrigerate for at least 2 hours or preferably overnight.
- 2
Heat the vegetable oil in a large Dutch oven over medium-high heat. Scrape the marinade from the chicken and reserve it, then sear the chicken in batches for 4-5 minutes per side until deeply browned. Set the chicken aside.
- 3
Add the reserved marinade vegetables and bell pepper to the same pot. Sauté for 5-7 minutes until softened, then stir in the ketchup and cook for 1 more minute.
- 4
Return the chicken to the pot and add the water or chicken broth and whole Scotch bonnet pepper. Bring to a boil, reduce the heat to low, cover, and simmer for 45-60 minutes until the chicken is tender. Remove the lid for the final 10 minutes to thicken the gravy.
- 5
Remove the thyme sprigs and Scotch bonnet pepper. Serve the stew hot with rice and peas or your favorite side.
