These roasted eggplant halves are a vegetarian entree․ Slits made in the eggplant allow the olive oil and cooked garlic to penetrate the roasted eggplant and cherry tomatoes‚ yellow and red‚ for added color and flavor․ People enjoy the charred parts of the eggplant․

I prefer a shallow ceramic baking dish if you have one‚ but a metal baking sheet can be used instead․ I use a chef's knife to cut about 1 inch crosswise through the squash but not all the way through the skin and then coat the cuts with oil․ Dry skin and the top of the squash will remain dry after baking‚ and the stem can be left on․ I like the appearance of the stem․ A wider dish makes it easier to serve both sides of the squash at the table․
The first 20 minutes are for cooking the tomatoes․ I look for browned edges and dark golden interiors in the tomatoes and popping or blistering of tomatoes as ways to tell when the dish is ready when I add the topping․ Some whole tomatoes are partially split․ Crushing garlic before adding it to the oil helps keep the garlic from burning in the oven․
Let zucchini stand for 5 minutes before adding parsley․ Leave cuts in the tomato juice for 5 minutes to absorb flavor․ Sprinkle sea salt flakes lightly over zucchini if you want some areas to be saltier․ I cook zucchini this way because I enjoy its tender inside and charred skin․
Why you'll love this recipe
- Deep scores include oil and garlic‚ and thick eggplant slices are cooked through with no dry spots․
- Red and yellow tomatoes are included in the recipe and cut in half․ Tomato juice is poured over the tomato halves․
- Sufficient for a vegetarian meal‚ green portions of stems included․
- Most of my work is with knives and ovens․ There is no pan to stand over․
- The charred skin is edible and helps hold each soft half together on the plate․
- I like it served hot from the oven‚ with chopped parsley added․
Ingredients
- •2 large eggplants (about 1 lb (450g) each, halved lengthwise)

- •½ tsp cracked black pepper (2g)
Instructions
- 1
Preheat the oven to 400°F (200°C).
- 2
Halve the eggplants lengthwise, keeping the green stems intact.
- 3
Score the cut flesh in a diagonal cross-hatch pattern about 1 inch (2.5cm) deep without piercing the skin.
- 4
Brush the scored flesh with 1/4 cup (60ml) of the olive oil.
- 5
Sprinkle the eggplants with the sea salt flakes and cracked black pepper.
- 6
Place the eggplants flesh-side up in a baking dish and roast for 20 minutes, until the flesh softens and begins to pull apart at the score lines.
- 7
Scatter the red cherry tomatoes, yellow cherry tomatoes, and minced garlic over the eggplant halves.
- 8
Drizzle the remaining olive oil over the dish, coating the garlic bits with oil.
- 9
Roast for another 15-20 minutes, until the tomatoes are burst or blistered and the eggplant edges are dark and charred.
- 10
Rest the dish for 5 minutes.
- 11
Garnish with the chopped parsley and an optional pinch of sea salt flakes.
