Quesadilla night comes at least twice a week at our house. Quesadillas are fun and easy to make (take no more than 10 minutes to slap together) and can be a relatively healthy meal (depending upon what you add to your quesadilla, of course). ┬áThe apple cheddar combo seems to be one that kids are agreeable to because the ingredients and flavors are familiar. Serve this along with some sliced raw veggies and a glass of low-fat milk and you’ve got a quick and balanced dinner in 15 minutes or less. Certainly a better option than a run through the drive through, wouldn’t you say?

Directions:

  1. Place tortilla on a large dinner plate or clean cutting surface. Layer sliced apples and cheese on one half of the tortilla.
  2. In a large non-stick skillet pan, heat 1 teaspoon of butter or margarine on low/medium heat.
  3. Place tortilla in the heated skillet and cook for 1-2 minutes. Fold over the empty half of the tortilla onto the half with the cheese and apples. Cook for another 1-2 minutes and then flip onto the other side with a spatula. Cook for another 1-2 minutes until golden brown on both size and all cheese has melted.
