I absolutely love this salad. It’s so refreshing. Basil, cucumber and watermelon are so clean and mild but when you add the feta and red onion it gives a nice sharp bite. I wish that I could make it all year long, but watermelon tastes exceptionally weird out of season. This salad is great as a side dish for a summer party or BBQ.

  1. In a large mixing bowl, combine the watermelon, cucumber, onion, and basil
  2. In a separate smaller mixing bowl, combine the vinegar and agave
  3. Add the bowl with the dressing to the bowl with the watermelon
  4. Sprinkle with feta cheese and sea salt (optional). Enjoy as an appetizer or side salad

    I did think…what in the world? Chicken and rice at the BEACH!

    and funny that this story had really nothing to do with Watermellon Salad!

    But, it added CHARM…I loved it!

    and this recipe is amazing. I would have never thought of my LOVE for Feta to go with watermellon! What has this got to do with watermellon…probably EVERYTHING!

  4. This salad is gorgeous. I don’t usually use watermelon in salads, but I’m always pleasantly surprised when a restaurant includes it. My go-to summer food is any salad or fresh berries.

  5. My daughter-in-law made this for me last week when I was under the weather. I would have never tried to make this myself. It is too different, plus I just love plain watermelon. Well, I am hooked on it. was such a delight to the pallet that I am going to make it my bring along dish for the summer picnics and get together s. I’m going to make it for myself this week. YUM!
