I don’t know where this name came from, but I love it. It sounds so much more exciting than “bean salad”….boring. I’ve wanted to make this recipe for a while now, but I am just now getting to do it. This dish has lots of fiber, protein and fresh crunchy veggies to keep you filled up. Works great as an appetizer/dip or as a lunch or dinner side dish….and a healthier alternative to mayonnaise-y summer salads.
This variation is very simple, but this recipe also works great with some other ingredients like…
- Black beans
- Bell peppers (any color)
- Herbs: cilantro, basil, parsley, etc.
- Spices: paprika, chili powder, coriander, etc.
- In a medium size mixing bowl, combine beans and vegetables. Stir to combine.
- Add red wine vinegar, olive oil, sea salt and black pepper (any any other seasonings). Stir to combine. Refrigerate for 1 hour before serving, if desired. Enjoy!
