I don’t know where this name came from, but I love it. It sounds so much more exciting than “bean salad”….boring. I’ve wanted to make this recipe for a while now, but I am just now getting to do it. This dish has lots of fiber, protein and fresh crunchy veggies to keep you filled up. Works great as an appetizer/dip or as a lunch or dinner side dish….and a healthier alternative to mayonnaise-y summer salads.

Texas Cowboy Caviar

This variation is very simple, but this recipe also works great with some other ingredients like…

  • Avocado
  • Corn
  • Black beans
  • Scallions
  • Bell peppers (any color)
  • Salsa
  • Herbs: cilantro, basil, parsley, etc.
  • Spices: paprika, chili powder, coriander, etc.

Gluten-Free too!

Texas Cowboy Caviar

Directions:

  1. In a medium size mixing bowl, combine beans and vegetables. Stir to combine.
  2. Add red wine vinegar, olive oil, sea salt and black pepper (any any other seasonings). Stir to combine. Refrigerate for 1 hour before serving, if desired. Enjoy!
