The inspiration for this recipe comes from a super friendly cashier at Trader Joe’s. Last week as I was checking out, the cashier at Trader Joe’s was telling me about this carrot and pineapple salad that she made for Easter. I loved the combination of ingredients but wanted more of a tropical flavor so I played around with the recipe and came up with this version.

Carrot Pineapple Salad

The combination of lime, cilantro and pineapple is tropical and super refreshing! This salad works great as a side or as a topping for fish/seafood tacos or meat. Enjoy!

Carrot Pineapple Salad


  1. In a large mixing bowl, combine pineapple, carrots, raisins and cilantro. Stir to combine.
  2. In a separate mixing bowl, whisk together maple syrup, grapeseed or canola oil, lime juice and salt and pepper.
  3. Pour dressing over fruit mixture, stir to combine then serve or refrigerate.
