The inspiration for this recipe comes from a super friendly cashier at Trader Joe’s. Last week as I was checking out, the cashier at Trader Joe’s was telling me about this carrot and pineapple salad that she made for Easter. I loved the combination of ingredients but wanted more of a tropical flavor so I played around with the recipe and came up with this version.
The combination of lime, cilantro and pineapple is tropical and super refreshing! This salad works great as a side or as a topping for fish/seafood tacos or meat. Enjoy!
- In a large mixing bowl, combine pineapple, carrots, raisins and cilantro. Stir to combine.
- In a separate mixing bowl, whisk together maple syrup, grapeseed or canola oil, lime juice and salt and pepper.
- Pour dressing over fruit mixture, stir to combine then serve or refrigerate.
