
This is a less greasy version of the classic meatball recipe. Enjoy!
Ingredients
- 1 pound of ground chicken
- ½ cup panko breadcrumbs
- ½ cup Italian seasoned breadcrumbs
- 1 egg
- ½ teaspoon of salt
- ½ teaspoon of pepper
- 1 onion (finely diced)
- 3 cloves of garlic (finely diced)
- 1 cup of shredded freshly grated parmesan cheese
- 2 tablespoons of freshly chopped basil
- 2 tablespoons of freshly chopped parsley
Directions
- In a large mixing bowl, add the ground chicken, breadcrumbs, egg, and salt, and pepper and mix with large wooden spoon or clean hands (you can wear gloves if you prefer).
- Next, add the onion, garlic, cheese, basil, and parsley and blend well.
- Form small meatballs about 1 inch in diameter and place them on an oiled baking sheet.
- Bake the meatballs at 350 degrees Fahrenheit for 30 minutes.
- Once the meatballs are done, transfer them to the pot with the sauce and allow them to flavor the sauce (about 15-20 minutes).
- Serve with freshly grated parmesan cheese and sprinkle with parsley.

Hi Corrine – I’m your mom’s Texas cousin and have had her meatballs and sauce tons of times! You are right….they are the absolute best. In fact, I still have her original hand-written recipe she wrote out for me on one of our Rhode Island trips when we were “younger”!! The paper it is written on is pretty worn, but I have kept it in a favorite cookbook for probably 25 years and would never re-write it. It is perfect just as it is. Your mom and I look more like sisters than cousins! Love your website and happy I found it. Your recipes sound delicious and I made the Butternut Squash Risotto. Big hit! Thank you!
