Chicken Meatballs

Spaghetti & Meatballs

This is a less greasy version of the classic meatball recipe. Enjoy!

Ingredients

  • 1 pound of ground chicken
  • ½ cup panko breadcrumbs
  • ½ cup Italian seasoned breadcrumbs
  • 1 egg
  • ½ teaspoon of salt
  • ½ teaspoon of pepper
  • 1 onion (finely diced)
  • 3 cloves of garlic (finely diced)
  • 1 cup of shredded freshly grated parmesan cheese
  • 2 tablespoons of freshly chopped basil
  • 2 tablespoons of freshly chopped parsley

Directions

  1. In a large mixing bowl, add the ground chicken, breadcrumbs, egg, and salt, and pepper and mix with large wooden spoon or clean hands (you can wear gloves if you prefer).
  2. Next, add the onion, garlic, cheese, basil, and parsley and blend well.
  3. Form small meatballs about 1 inch in diameter and place them on an oiled baking sheet.
  4. Bake the meatballs at 350 degrees Fahrenheit for 30 minutes.
  5. Once the meatballs are done, transfer them to the pot with the sauce and allow them to flavor the sauce (about 15-20 minutes).
  6. Serve with freshly grated parmesan cheese and sprinkle with parsley.

    Hi Corrine – I’m your mom’s Texas cousin and have had her meatballs and sauce tons of times! You are right….they are the absolute best. In fact, I still have her original hand-written recipe she wrote out for me on one of our Rhode Island trips when we were “younger”!! The paper it is written on is pretty worn, but I have kept it in a favorite cookbook for probably 25 years and would never re-write it. It is perfect just as it is. Your mom and I look more like sisters than cousins! Love your website and happy I found it. Your recipes sound delicious and I made the Butternut Squash Risotto. Big hit! Thank you! Hope to be in Rhode Island soon to visit my New England Branch of our family tree!! Hugs!
