I love my Mama. She is an amazing Mom….and no, I am not writing this because it’s Mother’s Day and that’s what you’re supposed to say today. It’s true.

My brother and I were so blessed to have a good childhood. To be able to look back and have happy memories as a child, to me, is a gift. I’m thankful for all the ways my Mom sacrificed and went without so we could have. I’m thankful for her love and for the way she expressed that though cooking…fresh baked cookies when we’d get off the bus, packing our lunches day after day, and making healthy dinners for us even when she was working and going to school.

Everyone has their favorite meals that their Mom makes. I have many, but here are a few of mine (in no particular order) fried pepper/onion/cheese sandwiches, eggplant parmesan, cream tuna and peas, and birthday cakes from scratch with homemade buttercream frosting!

And in the words of our departed brother Tupac Shakur…

Dear Mama

There are no words that can express how I feel
You never kept a secret, always stayed real
And I appreciate, how you raised me
And all the extra love that you gave me

  2. we have the same mom, so to add to your list: zucchini squares, sausage-potato casserole, chicken cutlets with mashed potatoes, any and all soups she makes.

    Ohhhhh, hands down….Mom’s Pineapple Upside Down Cake…I can smell it as we speak.

  4. My mom is not the best cook but has always made amazing salads with her homemade dressing and no matterhow I try I cannot make my dressing taste like hers…

    I love Jenny’s chicken cutlets and meatballs….yum!!! Also, one she made this cheeseburger pie, she found the recipe in family circle/woman’s day, I spilled sprite right in the pie dish..she never made it again but I fondly remember it.

    Also, I love Pammi’s food. Much more than my mom’s.. My favorites from Pammi’s kitchen are eggplant Parmesan, Moroccan beef stew, chicken casserole and any soup she creates. Yum!

    @Littles….haha well, I guess the crack fiend/black queen parts aren’t applicable in this case seeing that my Mama is Irish and has red hair, but the sentiments remain. Ooh what about Jenny’s Oreo balls? I need to try that Moroccan stew…I hear a lot about it.

    Oh god! First of all, I am a huge fan of the poetic legend Tupac Amaru Shakur. And to see & read that a white healthy beautiful woman like yourself knows about the passionate individual, well.. I give massive props to you gurl. Because it fills my tiny little heart with great depths of joy.

    Oh yeah, my mom makes the best tacos out there. Trust me, you should try them. They’re the bomb!
