
Today: Fritatta with onions, asparagus, potatoes, organic sharp cheddar cheese, and tomato, served with a side of caramelized onions and red peppers, cantaloupe, and soy breakfast sausages
Day 40 woot woot!
I’m gonna be straight…this is probably the most freaking delicious breakfast that I have eaten in the last 40 days. No joke. I made this fritatta last night and I ate it for dinner and I plan on eating it for breakfast in a little while. This was pretty simple to make. Becky, Kevin’s Mom, gave me this sweet pan for Christmas. It is a coated cast iron pan and I love it!
Ingredients
- 2 tablespoons of olive oil
- 1 small onion (diced)
- 1 large baking potato (washed, peeled, and thinly sliced)
- 10 eggs (8 whole eggs and 2 egg whites)
- 1/2 cup chopped fresh parsley
- 1 cup of shredded sharp cheddar cheese (I used organic)
- 1 cup of chopped asparagus (tips and spears)
- 3 slices of tomato
- 1 red bell pepper (thinly sliced)
- 1 small onion (thinly sliced)
- salt and pepper to taste
Directions
- In a cast iron pan, heat one tablespoon of olive oil over medium heat.
- Add the diced onion, potato, salt, and pepper. Saute for about 10 minutes until potato is tender.
- In a large mixing bowl, combine the eggs, egg whites, parsley, salt, pepper, and cheese.
- Preheat the oven to 425 degrees Fahrenheit.
- Add the asparagus to the pan then pour in the egg mixture and allow it to cook on medium/low heat for 10 minutes.
- Scrape the sides of the cast iron pan so that the mixture does not set to the sides and some of the mixture is able to flow underneath.
- Place the tomato slices on top and continue cooking until the egg mixture is just about set (about 5-10 minutes).
- Place the skillet into the oven and cook for about 3-5 minutes until the top becomes golden brown.
- Serve with a side of fresh fruit, sauteed onions and peppers, or for added protein, soy sausages. Vegetarian and vegan protein in the shape of meat makes me laugh. Why would someone who chooses to not eat meat want a “rib-let” or “sausage” link made of soy? lol

Well its been a real pleasure these past forty days, what an adventure of fun and food. Thanks for doing this Corrine. Keep me posted on your blog. Any who.. Today I had kashi go lean crunch with flax seeds, dried cranberries, and rice dream. Finished with a nice hot french pressed coffee to warm my cold ride to my friends house this morning. Blessings!

As for my last breakfast, I had a whole wheat bagel with Tofutti cream cheese and Teecino coffee with coconut hazelnut creamer. Yum!

Today was – ta da! Oats…with banana, sunflower seed butter and some Trader Joes Pumpkin Butter. 2 hardboiled egg whites on the side and a cup of coffee.

Wow WOW wow!! What a scrumptious looking breakfast! I enjoyed coffee, an egg, cooked with a clove of garlic laid on top of a thin slice of french bread with little slices of white sharp cheddar cheese in the middle. Yummo!

Wow, quite a feat coming up with 40 different breakfasts – great job Corrine! As for me, well I stick to only a few different ones, and it is old faithful that will represent me on the last day of the challenge: steel cut oatmeal with bananas, raisins, cinnamon and flaxseed.

This morning I am having water for breakfast. I know it doesn’t sound for real, but I had food poisoning all night the doctor said to stay on a clear liquid diet. Its torturous!

Today I started with a mini bowl of kix because I was craving it and then I had some steel cut oats with milk, mixed berries, walnuts and a little brown sugar.
Wow that looks a hundred times better than the whole wheat toast and cheddar cheese I had for breakfast!
This morning we had pumpkin spice pancakes with frying cheese and maple syrup. One of our favorite special day breakfasts.
