One of the best things about summer (aside from the extra long hours of daylight, trips to the beach and warm starry nights next to the camp fire) is the food! Summer food is light, fresh and packed with flavor…like this salsa! The combination of watermelon, papaya, cucumber and cilantro give a refreshing and natural sweetness while the red onion, lime and jalepeño add a nice bite. This recipe is super simple to prepare and tastes great with tortilla chips or on a fresh fish or seafood taco!

Watermelon Salsa


  1. In a large mixing bowl, combine watermelon, papaya, red onion, cucumber and jalepeño. Stir to combine.
  2. Next, add lime juice, cilantro and sea salt and stir again.
  3. Serve with tortilla chips or as a topping for quesadillas and tacos (especially fish & seafood tacos…yum!).
