I love recipes that are good for you, taste great and take less than 10 minutes to make. This is one of those recipes. I first tried edamame hummus on a veggie wrap and absolutely loved it! If you have never tried edamame (soybeans) then this dip might be a good place to start. It works well as a spread on a wrap or sandwich or as a dip for veggies, crackers or pita bread. Kids love dips too…so put out a plate of raw veggies and a little dip and see what happens. You might be pleasantly surprised;)
- In a food processor, combine edamame (shelled), garlic, tahini, cumin, water, soy sauce, lime juice, sea salt and cilantro. Mix on medium/low speed for 2-3 minutes or until all ingredients are thoroughly blended and hummus mixture is smooth.
- Serve with your favorite crackers, pita bread, sliced raw veggies, etc. Fresh homemade hummus can be stored in a refrigerator for 2-3 days.
- Optional Garnishes: cooked edamame beans, cilantro leaves, etc.
