Chocolate Mohawk Cake

Banana Bran Bundt Cake with a Chocolate Glaze (…it kinda looks like a Mohawk)

Bran taste better when it’s covered in chocolate. That is why I decided to smother my Nana’s famous banana bran bundt cake with a chocolate glaze. My dad actually made this cake for the photos and I think that he did a great job! I’m really impressed, Poppa. My dad found the recipe the other day as he was rummaging through my Nana’s old recipe collection. My Nana had tons of amazing recipes that I am hoping to make and post in the next few months.

Ingredients

  • 4 cups of regular All Purpose Flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 3 cups of mashed, fully ripe bananas
  • 3 cups of All Bran or Bran buds
  • 1 cup of canola oil (you could also use butter or margarine)
  • 1 ½ cups of sugar
  • 4 eggs
  • 1 cup chopped walnuts
  • 2 cups of melted semi-sweet chocolate chips or Nutella

Directions

  1. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt
  2. In another mixing bowl, combine the mashed bananas and the bran. Allow it to sit for 2-3 minutes until it has softened.
  3. In a separate mixing bowl, mix the oil (or butter) and sugar. Then add the eggs one at a time until mixed well.
  4. Add the banana/bran mixture to the sugar mixture.
  5. Stir in the flour mixture to the banana/bran/sugar mixture
  6. Add the walnuts.
  7. Spread evenly in a well-greased bundt pan.
  8. Bake at 350 degrees Fahrenheit for 1 hour.
  9. Cook until a knife or toothpick inserted into the cake comes out clean.
  10. Allow the cake to cool for 10 minutes before removing from the pan.
  11. Melt the chocolate chips or Nutella in a small sauce pan or Dutch oven over low heat until completely melted.
  12. Drizzle the melted chocolate over the entire cake. Enjoy! Really good with a glass of milk.
